Flourless Orange Pistachio Syrup Cake

Bright, aromatic, and irresistibly moist — this Mediterranean cake is made without flour, yet full of flavor. Each bite is infused with sweet oranges, crunchy pistachios, and a fragrant citrus syrup that keeps the cake incredibly soft. Perfect with tea, coffee, or as a show-stopping dessert for gatherings.

Ingredients

For the Cake

2 large oranges (preferably organic)

6 large eggs

250g ground almonds

200g granulated sugar

1½ tsp baking powder

1 tsp vanilla extract

100g pistachios, finely chopped

For the Syrup

Juice of 2 oranges

4 tbsp honey (or sugar)

1 tbsp orange blossom water (optional but delicious)

For Garnish (optional but recommended)

Chopped pistachios

Orange zest

A drizzle of honey

Preparation

Step 1 — Cook the oranges

  1. Place the 2 whole oranges (unpeeled) in a pot, cover with water, and boil for 45–60 minutes until very soft.
  2. Drain, let them cool completely, then cut into pieces and remove any seeds.
  3. Blend the entire oranges (including peel) into a smooth puree.

Step 2 — Make the cake batter

  1. Preheat the oven to 350°F (180°C) and grease a 9-inch (23 cm) cake pan.
  2. In a mixing bowl, beat the eggs and sugar until pale and slightly thick.
  3. Add the orange puree, vanilla, ground almonds, and baking powder.
  4. Fold until fully combined, then mix in the chopped pistachios.

Step 3 — Bake

  1. Pour the batter into the prepared pan and bake for 50–60 minutes, or until a toothpick comes out clean.
  2. If the top browns too quickly, cover loosely with foil.

Step 4 — Make the syrup

  1. In a small saucepan, heat orange juice, honey, and orange blossom water.
  2. Simmer for 5–7 minutes until slightly thickened.

Step 5 — Soak & serve

  1. While the cake is warm, poke small holes on top and slowly pour the warm syrup over the cake.
  2. Allow the cake to fully absorb the syrup, then garnish with chopped pistachios, zest, or a drizzle of honey. Serving Suggestions

Serve warm or chilled — both are delicious.

Even better the next day when the flavors deepen.

Add whipped cream, Greek yogurt, or vanilla ice cream for extra indulgence.
