Ingredients
1 box yellow cake mix (15.25 oz / 432 g)
2 large eggs
1/3 cup vegetable oil
1 teaspoon vanilla extract (optional but recommended)
Cinnamon-Sugar Coating
1/4 cup granulated sugar
1 tablespoon ground cinnamon
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, add cake mix, eggs, oil, and vanilla extract. Mix until a soft dough forms.
- In a small bowl, combine sugar and cinnamon.
- Scoop dough and roll into small balls (about 1 tablespoon each).
- Roll each dough ball in the cinnamon-sugar mixture until fully coated.
- Place balls on the baking sheet, leaving space between them.
- Bake for 9–11 minutes, or until the edges are set but the centers are still soft.
- Let cookies cool on the baking sheet for 5 minutes, then transfer to a cooling rack.
