Crispy Spiced Chicken Thighs with Roasted Potatoes & Green Beans

For the Chicken:

2–3 chicken thighs (bone-in or boneless)

1 tbsp olive oil

1 tsp paprika

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp dried thyme or oregano

Salt & black pepper

For the Potatoes:

2 medium potatoes, cut into chunks

1 tbsp olive oil

1/2 tsp paprika

1/2 tsp dried herbs

Salt & pepper

For the Green Beans:

1 heaping cup fresh green beans

1 tsp olive oil

Salt, pepper, garlic powder

Prep the Chicken

Toss chicken thighs with olive oil, paprika, garlic powder, onion powder, herbs, salt, and pepper.

Let marinate for at least 15 minutes (or overnight).

Roast the Potatoes

Preheat oven to 200Β°C (400Β°F).

Toss potatoes with oil, seasonings, and spread on a baking tray.

Roast for 25–30 minutes, flipping halfway, until crispy and golden.

Cook the Chicken

Option A: Oven β€” place chicken on a tray and bake for 25–30 minutes until crispy and cooked through.

Option B: Pan-sear β€” cook 5–7 minutes per side until browned and juicy.

Roast the Green Beans

Toss with a little oil, salt, pepper, and garlic powder.

Roast for 12–15 minutes or sautΓ© in a pan until tender and slightly charred.

Assemble the Plate

Add crispy chicken thighs, roasted potatoes, and green beans to your plate.
