Low-Carb French Toast Stuffed Wraps (or Sammies)

Ingredients

Egg Mixture:

2 large eggs

1/4 cup heavy whipping cream

1 tsp vanilla extract

1 tbsp keto cinnamon sugar (cinnamon + granulated Swerve)

Filling:

4 oz cream cheese, softened

1 1/2 tbsp powdered sweetener

1 tsp vanilla extract

1/2 tsp lemon juice

1/2 cup mixed berries (blueberries, raspberries, blackberries)

Bread/Wrap Options:

6 slices Sola keto bread or

4 Mission low-carb tortillas

For Cooking:

Butter

Optional Toppings:

Homemade whipped cream

Sugar-free maple syrup

Instructions

Prepare the egg mixture:
In a bowl, whisk together the heavy cream, eggs, and keto cinnamon sugar. Set aside.

Make the filling:
In another bowl, mix the cream cheese, powdered sweetener, vanilla, and lemon juice until smooth.
Gently fold in the mixed berries.

Assemble:
Spread the cream cheese mixture onto either:

Bread slices to form 3 sandwiches, or

Wraps, rolled individually.

Dip:
Lightly dip each sandwich or wrap into the egg mixture, coating both sides.

Cook:
Heat a medium frying pan over medium heat and melt a bit of butter.
Cook each stuffed French toast sandwich or wrap for about 3 minutes per side, or until golden brown.

Serve:
Top with whipped cream and sugar-free maple syrup.
