Garlic-Lemon Chicken with Veggie Rice & Roasted Broccoli-Cauliflower Mix

A balanced and flavorful meal featuring juicy pan-seared chicken, a colorful veggie rice with corn and green beans, and a tender roasted mix of broccoli and cauliflower. Simple, satisfying, and perfect for a clean, healthy lunch!

𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬:

For the Chicken:

300g chicken breast, sliced

1 tbsp olive oil

1 tsp lemon juice

1/2 tsp garlic powder

1/2 tsp paprika

Salt & pepper

For the Veggie Rice:

1 cup cooked rice

1/3 cup corn

1/3 cup chopped green beans

1 tbsp soy sauce

1 tsp butter

1/4 tsp black pepper

For the Veggies:

1 cup broccoli florets

1 cup cauliflower florets

1 tbsp olive oil

Salt & pepper

𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬:

Cook the Chicken

Season chicken with garlic powder, paprika, salt, pepper, and lemon.

Heat oil in a pan and cook chicken 4–5 minutes per side until golden.

Make the Veggie Rice

In a pan, melt butter and add cooked rice.

Stir in corn, green beans, soy sauce, and black pepper.

Heat until warm and mixed.

Prepare the Veggies

Toss broccoli and cauliflower with oil, salt, pepper.

Roast at 425°F (220°C) for 15–20 minutes or steam for 6–8 minutes if preferred.

Assemble the Plate

Add veggie rice, roasted vegetables, and sliced chicken.

Serve warm and enjoy!
