Cottage Cheese Lemon Poppy Seed Mug Cake – Quick, Delicious & Healthy!

Ingredients (makes 1 mug cake):

1/2 cup cottage cheese

1 tablespoon lemon juice

1 teaspoon lemon zest

1 tablespoon honey

1/4 cup almond flour

1 tablespoon poppy seeds

1/4 teaspoon baking powder

1/4 teaspoon vanilla extract

1 egg

1/8 teaspoon salt

Instructions:

  1. Add cottage cheese, lemon juice, lemon zest, honey, vanilla extract, and egg to a blender or food processor.
    Blend until smooth and creamy.
  2. Pour the mixture into a microwave-safe mug or small ramekin.
  3. Add almond flour, baking powder, poppy seeds, and salt.
    Stir well until everything is fully combined.
  4. Microwave for 1 minute 30 seconds to 2 minutes, depending on the strength of your microwave.
    The cake should rise and set in the center.
  5. Let it cool for 1–2 minutes, then enjoy straight from the mug or top with a drizzle of honey, yogurt, or extra lemon zest! Tips:

If you prefer it sweeter, add an extra teaspoon of honey or a splash of maple syrup.

For a richer taste, add 1 teaspoon of melted butter before microwaving.

You can also bake it in the oven at 350°F (175°C) for 12–15 minutes.
