Ingredients:
For the Balsamic Glaze:

1 cup balsamic vinegar
⅓ cup brown sugar
For the Bruschetta Topping:

2 cups diced tomatoes
3 garlic cloves, minced
½ teaspoon kosher salt
¼ teaspoon fresh ground black pepper
1 tablespoon balsamic vinegar or red wine vinegar
1 tablespoon olive oil
For the Chicken:

4 boneless, skinless chicken breasts
Salt and pepper, to taste
1 tablespoon olive oil (for cooking)
Instructions:

  1. Prepare the Balsamic Glaze:

In a small saucepan, combine the balsamic vinegar and brown sugar over medium heat.
Stir to combine and bring to a simmer. Allow it to cook, stirring occasionally, until the mixture thickens to a syrupy consistency, about 10-15 minutes.
Remove from heat and set aside to cool.

  1. Make the Bruschetta Topping:

In a medium bowl, combine the diced tomatoes, minced garlic, kosher salt, black pepper, balsamic vinegar, and olive oil. Stir well to combine.
Let it sit for at least 10 minutes to allow the flavors to meld together.

  1. Cook the Chicken:

Season both sides of the chicken breasts with salt and pepper.
Heat 1 tablespoon of olive oil in a large skillet or grill pan over medium-high heat.
Cook the chicken breasts for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken is cooked through.
Remove from heat and set aside.

  1. Assemble the Dish:

Once the chicken is cooked, top each breast with a generous amount of the bruschetta mixture.
Drizzle the balsamic glaze over the top of the chicken and bruschetta.

  1. Serve:

Serve the bruschetta chicken hot with your favorite side dishes, such as roasted vegetables, a fresh salad, or garlic bread.
Tips:
For extra flavor: You can sprinkle some fresh basil or mozzarella cheese on top of the bruschetta before drizzling with the balsamic glaze.
Grilling Option: For a smoky flavor, you can grill the chicken instead of pan-searing it. Just be sure to brush it with olive oil to prevent sticking.
Make-Ahead Tip: Prepare the balsamic glaze and bruschetta topping ahead of time to save time when assembling the dish.
Enjoy this Bruschetta Chicken with its delightful layers of juicy chicken, fresh tomato topping, and the rich sweetness of balsamic glaze!
