Keto 2-Bite Mini Pizzas

Ingredients

1 cup shredded mozzarella cheese

1 tbsp cream cheese

¼ cup almond flour

½ tsp baking powder

Additional mozzarella for topping

Rao’s Tomato Basil (or your favorite marinara)

Pepperoni slices (optional)

Any other desired toppings

Instructions

Preheat your oven to 350°F.

Melt the Cheeses
Place the mozzarella and cream cheese in a microwave-safe bowl.
Heat in 30-second intervals, stirring in between, until melted and combined.

Prepare the Dough
In a separate small bowl, mix together the almond flour and baking powder.
Add the flour mixture to the melted cheese and knead until a smooth dough forms.

Form the Crusts
Divide the dough into 9 equal pieces.
Press each piece into the cups of a muffin pan, flattening the dough to form mini crusts.

Bake the Crusts
Place the muffin pan on a baking sheet and bake for 5 minutes.

Add Sauce & Toppings
Remove from the oven and top each crust with about 1 teaspoon of marinara (more or less to taste).
Sprinkle with mozzarella and add pepperoni or any desired toppings.

Bake Again
Return to the oven for 10 minutes, or until the cheese melts and begins to bubble.

Optional Crisping
For extra-crispy cheese and toppings, broil for 2–3 minutes.
