For the Garlic Butter Shrimp
12β15 medium shrimp, peeled & deveined
1 tbsp olive oil
1 tbsp butter
2 garlic cloves, minced
Β½ tsp smoked paprika
Β½ tsp Cajun seasoning (optional)
Salt & pepper (to taste)
1 tbsp chopped parsley
Lemon wedge
For the Rice
1 cup cooked white rice
1 tsp butter
Β½ tsp garlic powder
Salt & black pepper (to taste)
Optional: chopped parsley
For the Caramelized Peppers & Onions
Β½ green bell pepper, sliced
Β½ red bell pepper, sliced
Β½ onion, sliced
1 tsp olive oil
Salt, pepper, and a pinch of oregano
For the Avocado
Β½ avocado, sliced

- Make the Rice
Mix cooked rice with butter, garlic powder, salt, pepper, and parsley.
Fluff with a fork and set aside.
- Caramelize the Peppers & Onions
Heat olive oil in a skillet on medium.
Add sliced peppers and onions with salt, pepper, and oregano.
Cook 8β10 minutes until soft, slightly charred, and caramelized.
Remove from pan.
- Cook the Garlic Butter Shrimp
In the same skillet, heat olive oil and butter on medium-high.
Add garlic and sautΓ© 30 seconds until fragrant.
Season shrimp with paprika, Cajun seasoning, salt, and pepper.
Add shrimp to pan and cook 2 minutes per side until pink and lightly browned.
Toss with fresh parsley and squeeze lemon over top.
- Assemble the Bowl
Add the rice to one side of the bowl.
Place the shrimp beside it.
Add caramelized peppers/onions and sliced avocado.
Finish with black pepper and an optional extra squeeze of lemon.
