Chocolate Gooey Butter Cookies (Low Carb)

Ingredients

1 stick butter, room temperature

8 oz cream cheese, room temperature

1 tbsp vanilla extract

3 eggs

1 box low-carb chocolate cake mix

Powdered sugar substitute (for rolling)

Instructions

In a large bowl, beat together the softened butter, cream cheese, vanilla, and eggs until smooth.

Add the low-carb cake mix and mix until fully combined.

Refrigerate the dough for 1 hour to firm up.

Scoop and roll the dough into balls.

Roll each ball in powdered sugar substitute.

Place on a baking sheet and bake at 350°F for 10 minutes.

Let cool slightly—cookies will be soft and gooey!
