Blooming Quesadilla Ring

Ingredients:

For the quesadilla ring:

4 large flour tortillas


1 1/2 cups shredded cheddar cheese


1 1/2 cups shredded mozzarella cheese


1/2 cup cooked chicken (shredded or diced, optional)


1/4 cup red bell pepper (diced)


1/4 cup green bell pepper (diced)


1/4 cup red onion (finely chopped)


1/4 cup sliced black olives (optional)


1/4 cup fresh cilantro (chopped)


1/2 tsp ground cumin


1/2 tsp chili powder


Salt and pepper to taste


For the dipping sauce (optional):

1/2 cup sour cream


2 tbsp salsa or taco sauce


1 tsp lime juice


1/2 tsp ground cumin


Preparation:

Prepare the filling:
In a medium bowl, combine the shredded cheddar cheese, shredded mozzarella cheese, cooked chicken (if using), diced red and green bell peppers, red onion, black olives (if using), and chopped cilantro. Sprinkle in the cumin, chili powder, salt, and pepper. Stir until all ingredients are well mixed.

Prepare the tortillas:
Place the first tortilla flat on a clean surface or cutting board. Spread a generous portion of the cheese and vegetable mixture evenly across the tortilla, leaving about 1-inch border around the edges.

Assemble the quesadilla ring:
Place the second tortilla over the filled tortilla and gently press it down to stick. Repeat with the remaining two tortillas, layering the fillings in between each tortilla to create a stack.

Cut the quesadilla ring:
Using a sharp knife or pizza cutter, carefully cut the stacked tortillas into a ring shape. Start by cutting a small circle in the center of the stack, then slice the remaining portion into 8 equal wedges, like a pizza.

Cook the quesadilla ring:
Heat a large skillet over medium heat and add a little oil or cooking spray. Carefully place the quesadilla ring in the skillet, with the edges facing down, and cook for 3-4 minutes on each side, until golden brown and crispy. You may need to cook in batches, depending on the size of your skillet.

Prepare the dipping sauce (optional):
While the quesadilla ring is cooking, mix together sour cream, salsa (or taco sauce), lime juice, and ground cumin in a small bowl. Stir until smooth and well combined.

Serve:
Once the quesadilla ring is golden and crispy, remove it from the skillet and place it on a serving platter. Let it cool slightly, then slice and serve with the dipping sauce.
