Keto Mini Pepper Nachos (Ninja Foodi Grill or Oven)

Ingredients

Seasoning Mix:

1 tbsp chili powder

1 tsp ground cumin

1 tsp garlic powder

1 tsp paprika

½ tsp kosher salt

½ tsp black pepper

½ tsp oregano

¼ tsp red pepper flakes (add more for extra heat)

Nachos:

1 lb ground beef

1 lb mini peppers, halved and seeded

1½ cups shredded cheddar cheese

½ cup chopped tomatoes

Optional toppings: sour cream, olives, diced jalapeño, avocado, green onions, cilantro, etc.

Instructions (Oven Method)

Make the Seasoning:
In a small bowl, mix together the chili powder, cumin, garlic powder, paprika, salt, pepper, oregano, and red pepper flakes.

Cook the Beef:
In a skillet over medium heat, brown the ground beef for 7–10 minutes, breaking it up as it cooks.
Stir in the seasoning mixture and cook for another minute until fully combined. Remove from heat.

Prepare the Peppers:
Preheat oven to 400°F.
Line a baking sheet with parchment paper or foil.
Arrange the halved mini peppers cut-side up, placed closely together.

Layer and Bake:
Spoon the seasoned beef over each pepper half.
Sprinkle shredded cheddar over the top.
Bake for 5–10 minutes, or until the cheese is melted.

Finish and Serve:
Top with chopped tomatoes and your favorite toppings.
Serve immediately.

Ninja Foodi Grill (5-in-1) Instructions

Preheat the grill using Air Crisp at 345°F for 5 minutes.

Place mini peppers in the base tray or divide into individual foil trays (as shown in the picture).

Air crisp for 4 minutes, then sprinkle with shredded cheese.

Continue air crisping for 1 more minute, or until the cheese is melted.

Add toppings and enjoy!
