How to prepare Keto Lemon Pound Cake

Ingredients

5 eggs

⅔ cup sweetener

½ cup melted butter

2¼ cups almond flour

5 tbsp coconut flour

1 tsp baking powder

½ cup lemon juice

Instructions

Preheat oven to 350°F.

In a mixing bowl, whisk together the melted butter, sweetener, eggs, and lemon juice until smooth.

Add the almond flour, coconut flour, and baking powder to the wet mixture. Stir until fully combined.

Line a loaf pan with parchment paper and pour in the batter.

Bake at 350°F for 15 minutes.

Reduce heat to 325°F and continue baking for 45–60 minutes.

Begin checking around 45 minutes; the cake should be set in the center.

Remove from oven and prepare the glaze.

Lemon Glaze
Ingredients

1 cup powdered Swerve

2 tbsp lemon juice

4 tbsp water

Instructions

Blend all glaze ingredients together until smooth.

Pour the glaze over the warm cake for the perfect finish.
