🛒 Ingredients

4 large eggs

1 cup heavy cream (or fresh cream)

100 g (3.5 oz) goat cheese, crumbled

100 g (3.5 oz) bacon lardons (or chopped smoked bacon)

1 tablespoon butter (for greasing)

Salt and black pepper, to taste

Fresh chives or parsley, chopped (for garnish)

Optional: a pinch of paprika or nutmeg

👨‍🍳 Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Cook the bacon in a pan over medium heat until crispy. Drain excess fat and set aside.
  3. Grease small oven-safe ramekins with butter.
  4. Divide the ingredients: Add a spoonful of cream to the bottom of each ramekin, then add bacon and goat cheese.
  5. Crack one egg into each ramekin without breaking the yolk.
  6. Add the rest of the cream on top. Season with salt, pepper, and optional paprika or nutmeg.
  7. Place the ramekins in a baking dish and pour hot water around them until halfway up the sides (bain-marie method).
  8. Bake for 12–15 minutes, depending on how runny you want the yolk.
  9. Remove carefully, garnish with chopped herbs, and serve immediately.
