For the Chicken
1 large chicken breast
1 tbsp olive oil
1 tsp garlic powder
1 tsp onion powder
1 tsp smoked paprika
Β½ tsp chili flakes (optional)
Salt & pepper
For the Potatoes
1 cup baby potatoes, halved
1 tbsp olive oil
Β½ tsp garlic powder
Β½ tsp dried parsley
Salt & pepper
For the Veggies
1 cup broccoli florets
1 cup green beans
1 tsp olive oil
Pinch of salt
Optional: grated Parmesan for finishing

- Roast the Chicken
Preheat oven to 400Β°F (200Β°C).
Coat chicken with olive oil and all seasonings.
Bake for 22β25 minutes, or until internal temp reaches 165Β°F (74Β°C).
Let rest 5 minutes before slicing.
- Crisp the Potatoes
Toss halved baby potatoes with olive oil, garlic powder, parsley, salt & pepper.
Spread on a baking sheet and roast for 25β30 minutes, flipping halfway.
- Cook the Veggies
Option A: Oven (same tray)
Toss broccoli and green beans with olive oil and salt.
Roast for 12β15 minutes.
Option B: Stovetop
SautΓ© broccoli and beans in a pan with 1 tsp oil until tender.
Add a sprinkle of Parmesan at the end if desired.
- Assemble
Place sliced chicken, potatoes, green beans, and broccoli together in a bowl or plate. Sprinkle more herbs or Parmesan if desired.
