Florida Shrimp Pie


Ingredients:

  • 1 pre-made pie crust (9-inch)
  • 1 pound shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced (red or green)
  • 1 cup corn kernels (fresh or frozen)
  • 1 teaspoon Old Bay seasoning
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 3 large eggs
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat the Oven:

Preheat your oven to 375°F (190°C).

  1. Prepare the Shrimp Filling:

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent, about 3-4 minutes.

In a mixing bowl, whisk together the eggs and heavy cream until well combined. Stir in the shredded cheddar cheese.

Once the shrimp mixture has cooled, combine it with the egg and cheese mixture. Pour this filling into the pre-made pie crust, spreading it evenly.

  1. Bake the Pie:

Place the pie in the preheated oven and bake for 30-35 minutes, or until the filling is set and the top is lightly golden.

  1. Cool and Serve:

Remove the pie from the oven and let it cool for about 10 minutes. Garnish with fresh parsley before slicing and serving.
