How To Prepare Keto Fathead Rolls (Coconut Flour)

Ingredients

4 cups shredded mozzarella cheese

4 oz cream cheese

1 cup coconut flour

1 tbsp baking powder

1/2 tsp dried oregano

1/2 tsp dried basil

1/2 tsp dried parsley

1/2 tsp garlic powder

1/2 tsp sea salt

1/4 tsp onion powder

4 eggs, beaten

Instructions

Preheat oven to 425°F (220°C).

In a microwave-safe bowl, combine the mozzarella and cream cheese. Microwave for 2–4 minutes, stirring occasionally, until melted and smooth.

In a separate bowl, whisk together the coconut flour, baking powder, and all dried seasonings.

Add the beaten eggs to the dry ingredients and mix until fully combined.

Add this mixture to the melted cheese and stir well. You may need to knead with your hands to fully incorporate everything.

Lightly coat a baking sheet with olive oil, coconut oil, or avocado oil spray.

With wet hands, divide the dough into 12 equal portions and shape into rolls. Flatten slightly if preferred.

Place on the baking sheet and bake for 15 minutes, or until lightly golden.

Let cool, then slice if desired. Enjoy fresh, or refrigerate/freeze for later!
