
Ingredients
1 lb ground beef
1½ cups cheddar cheese
1 red bell pepper
1 green bell pepper
1 zucchini
1 yellow onion
1 cup cherry tomatoes
1 jalapeño
1 Tbsp chili powder
2 tsp onion powder
1 tsp cumin
1 tsp garlic powder
1 tsp paprika
1 tsp dried oregano
½ tsp pink Himalayan salt
Green onions & shredded lettuce (for topping)
Sour cream (optional)
Instructions
Prep the Veggies
Dice all vegetables into bite-size pieces.
Brown the Beef
In a large skillet over medium heat, cook the ground beef until browned. Drain if needed.
Add Vegetables
Add the onion, red and green peppers, and zucchini.
Stir in the cherry tomatoes and jalapeño; cook for a few more minutes.
Season
Add chili powder, onion powder, cumin, garlic powder, paprika, oregano, and salt.
Cook for about 5 minutes, letting the flavors blend.
Add Cheese
Turn off the heat. Sprinkle the cheddar cheese over the top and let it melt.
Serve & Garnish
Top with shredded lettuce, green onions, and a dollop of sour cream if you like.
