2 boneless, skinless chicken breasts
6 strips bacon
8 ounces pasta (like penne or rotini)
1 cup ranch dressing
1 cup shredded cheddar cheese
1 cup cherry tomatoes, halved
1 tablespoon olive oil
Salt and pepper to taste
Fresh parsley for garnish (optional)
Directions:
Preheat Oven:
1.1. Preheat your oven to 400°F (200°C).
Cook the Pasta:
2.1. In a large pot, bring water to a boil and add a pinch of salt.
2.2. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
Cook the Bacon:
3.1. In a large skillet, cook the bacon over medium heat until crispy.
3.2. Remove the bacon from the skillet and place it on paper towels to drain.
Cook the Chicken:
4.1. In the same skillet, add olive oil if needed and season the chicken breasts with salt and pepper.
4.2. Cook the chicken for about 6-7 minutes on each side, or until fully cooked. Remove from the skillet and let it rest.
Combine Ingredients:
5.1. In a large bowl, combine the cooked pasta, ranch dressing, shredded cheddar cheese, and halved cherry tomatoes.
5.2. Chop the cooked bacon and add it to the bowl.
Assemble and Bake:
6.1. Slice the cooked chicken and place it on top of the pasta mixture in a baking dish.
6.2. Sprinkle any remaining cheese on top.
6.3. Bake in the preheated oven for about 15-20 minutes, or until heated through and the cheese is melted.
