
On the menu tonight at our house — warm, creamy, delicious!
Ingredients
1 tbsp butter
3 cloves garlic, minced
½ cup chopped onion
3 cups broccoli florets
3½ cups chicken broth
1 cup heavy cream
½ tsp garlic powder
Salt & pepper, to taste
3 cups shredded cheddar cheese
½ tsp xanthan gum (optional, for thickening)
Instructions
In a large pot over medium-high heat, sauté the onion and garlic in butter until soft and fragrant.
Add the broccoli, chicken broth, and heavy cream. Season with garlic powder, salt, and pepper.
Bring to a boil, then reduce heat and simmer uncovered for about 10 minutes.
Remove from heat and stir in the shredded cheddar one cup at a time, mixing well between each addition to avoid clumping.
Optional: Stir in the xanthan gum to thicken the soup to your preferred consistency.
Ladle into bowls, add a sprinkle of extra cheddar on top, and serve immediately!
