Easy Mexican Cauliflower Rice (Rewritten Recipe)

A quick, flavorful low-carb “rice” that works as a side dish or a tasty filling for tacos, bowls, and burritos.

Ingredients

1 bag thawed cauliflower rice

1 can Rotel (any variety)

Olive oil (for sautéing)

Taco seasoning or all-purpose Mexican seasoning

Optional toppings: shredded cheese, jalapeños, cilantro, lime

Instructions

Heat a splash of olive oil in a skillet over medium heat.

Add the cauliflower rice and season generously with taco or Mexican seasoning.

Sauté until lightly browned.

Stir in the can of Rotel.

Let the mixture simmer for 5 minutes to absorb flavors.

Taste and adjust seasoning as needed.
