Creamy Potato Salad

This Creamy Potato Salad is rich, smooth, and full of comforting flavors. Tender potatoes combined with chopped eggs and creamy mayonnaise create the perfect side dish for family gatherings, picnics, or weeknight dinners. It’s simple, classic, and wonderfully satisfying!

Ingredients:

4 medium potatoes, peeled

2 boiled eggs, chopped

1/2 cup mayonnaise

1 tablespoon mustard (optional but recommended)

1 tablespoon lemon juice or vinegar

1/4 cup chopped green onions or parsley (optional)

Salt and black pepper to taste

Directions:

Boil the potatoes:
Cut the peeled potatoes into medium cubes. Place them in a pot of salted water and boil for 10–12 minutes until tender but not mushy. Drain and let them cool completely.

Prepare the dressing:
In a bowl, mix mayonnaise, mustard (if using), lemon juice or vinegar, salt, and pepper until smooth.

Combine ingredients:
In a large bowl, add the cooled potatoes, chopped boiled eggs, and green onions or parsley.

Coat and chill:
Pour the dressing over the mixture and gently toss to coat everything evenly. Cover and refrigerate for at least 30 minutes before serving for best flavor.

Serving Tip:

Serve cold and garnish with a sprinkle of black pepper or chopped herbs for a fresh finishing touch.
