Roasted Beet & Goat Cheese

This Roasted Beet & Goat Cheese Log is a stunning and delicious appetizer that combines creamy goat cheese with the natural sweetness of roasted beets. Ingredients:

8 ounces goat cheese, softened

1/2 cup roasted beets, peeled and finely grated

1 tablespoon honey

1/4 teaspoon black pepper

1/4 teaspoon garlic powder

1/4 cup fresh parsley, chopped

1/4 cup pistachios, chopped

1 tablespoon olive oil (for roasting the beets)

Directions:

  1. Roast the Beets

Preheat the oven to 400°F (200°C).

Wash the beets and coat them lightly with olive oil.

Wrap each beet in aluminum foil and roast for 45–60 minutes, or until tender.

Allow them to cool, then peel and grate the beets finely.

  1. Prepare the Cheese Mixture

In a mixing bowl, combine:

softened goat cheese

grated roasted beets

honey

black pepper

garlic powder

Mix well until the texture is smooth and fully combined.

  1. Shape the Log

Lay a sheet of plastic wrap on a flat surface.

Transfer the cheese mixture onto the wrap and shape it into a log using your hands.

Wrap tightly and refrigerate for at least 1 hour to firm up.

  1. Coat the Log

In a small bowl, mix the chopped parsley and pistachios.

Unwrap the chilled cheese log and roll it gently in the mixture, pressing lightly to coat all sides evenly.

  1. Serve

Slice the cheese log and serve with crackers, crostini, toasted bread, or fresh vegetables.

Enjoy immediately, or cover and keep refrigerated until serving.
