Lemon-Herb Chicken with Honey Carrots & Parmesan Broccoli

A rich, flavorful, and beautifully roasted dish loaded with citrus, caramelized veggies, and a crispy parmesan finish!

For the Lemon-Herb Chicken

1 chicken thigh (boneless or bone-in)

1 tbsp olive oil

1 tbsp lemon juice

2 lemon slices (for roasting)

1 tsp dried oregano

1 tsp garlic powder

Β½ tsp paprika

Salt & pepper

For the Honey-Glazed Carrots

1 cup baby carrots

1 tbsp honey

1 tsp olive oil

Pinch of salt

Pinch of smoked paprika (optional)

For the Parmesan Broccoli

1Β½ cups broccoli florets

1 tbsp olive oil

2 tbsp grated Parmesan

1 tbsp breadcrumbs (optional for crispiness)

Salt & pepper

Prepare the Chicken
Preheat oven to 200Β°C (400Β°F).
Rub chicken with olive oil, lemon juice, oregano, garlic powder, paprika, salt, and pepper.
Place lemon slices on top.
Roast for 25–30 minutes, until golden and cooked through.

Honey-Glazed Carrots
Toss baby carrots with honey, olive oil, salt, and paprika.
Spread on a baking tray and roast for 20–25 minutes until caramelized.

Parmesan Broccoli
Toss broccoli with olive oil, Parmesan, breadcrumbs (optional), salt, and pepper.
Roast for 15–20 minutes, until lightly browned and crispy.

Assemble the Plate
Add the lemon-herb chicken, caramelized carrots, and parmesan broccoli.
Drizzle leftover pan juices over the chicken for extra flavor!
