Ingredients
Gingerbread cookies
Mascarpone cheese
Whipped cream
Powdered sugar
Strong coffee
Rum extract or vanilla extract
Ground cinnamon
Ground ginger
Ground nutmeg
Cocoa powder
Crumbled gingerbread (for topping)
Instructions
- Prepare the coffee mixture:
Brew strong coffee and let it cool. Stir in rum extract or vanilla extract. - Whip the cream:
Beat whipped cream until soft peaks form. - Make the mascarpone filling:
Combine mascarpone cheese with powdered sugar, cinnamon, ginger, and nutmeg.
Fold the whipped cream into this mixture gently. - Assemble the tiramisu:
Quickly dip each gingerbread cookie into the cooled coffee.
Arrange a full layer of dipped cookies in the bottom of your serving dish.
Spread half of the mascarpone mixture on top.
Add a second layer of dipped cookies.
Spread the remaining mascarpone mixture over the top.

Dust generously with cocoa powder.
Sprinkle crumbled gingerbread over the cocoa for texture. - Chill:
