
This indulgent plate is packed with flavor: creamy Cajun pasta loaded with shrimp and salmon, buttery mashed potatoes, savory sautéed spinach, and a fluffy cheddar biscuit — a full soul-food-style feast with restaurant vibes!
𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬:
For the Cajun pasta:
½ lb penne pasta
6 large shrimp, peeled & deveined
1 salmon fillet, cut into chunks
1 bell pepper, thinly sliced
1 cup heavy cream
½ cup grated Parmesan
1 tbsp Cajun seasoning
1 tbsp olive oil
Salt & pepper to taste
For the mashed potatoes:
3 medium potatoes, peeled and cubed
¼ cup milk or cream
2 tbsp butter
Salt & pepper to taste
For the sautéed spinach:
2 cups fresh spinach
1 garlic clove, minced
1 tsp olive oil
Pinch of salt
For the cheddar biscuit (optional shortcut):
1 cup Bisquick or baking mix
½ cup shredded cheddar
⅓ cup milk
1 tbsp melted butter + parsley for topping
𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬:
Cook pasta until al dente, then drain and set aside.
Sauté shrimp and salmon in olive oil with Cajun seasoning until just cooked. Remove and set aside.
In the same pan, add cream and Parmesan. Simmer 3–4 mins until thickened. Add bell pepper, cooked pasta, and seafood. Toss to coat.
Boil potatoes until soft, mash with butter and milk. Season to taste.
Sauté spinach in olive oil and garlic for 2–3 mins until wilted.
Mix biscuit dough, shape and bake at 400°F (200°C) for 10–12 mins. Brush with butter and parsley.
