Soft, chewy, and loaded with toasted pecans — these cookie bars are the perfect mix between a buttery blondie and a gooey cookie. The brown sugar gives a deep caramel flavor, while the flaky sea salt on top balances the sweetness beautifully. Perfect for parties, holidays, or anytime you crave a cozy treat!
Ingredients
1 cup (2 sticks) unsalted butter, melted
2 cups brown sugar, packed
2 large eggs
1 tbsp vanilla extract
2 cups all-purpose flour
1 tsp baking powder
½ tsp baking soda
½ tsp salt
1 cup chopped pecans (toasted preferred)
½ cup chocolate chips (optional)
Flaky sea salt for topping (optional but recommended)
Method – How to Make It
- Preheat your oven to 350°F (175°C). Line a 9×13 baking pan with parchment paper and lightly grease it.
- Toast the pecans (optional but delicious): Place pecans in a dry skillet over medium heat for 3–4 minutes until fragrant. Let cool.
- Prepare the batter:
In a large bowl, whisk the melted butter and brown sugar until smooth.
Add eggs and vanilla extract; whisk until fully combined.
- Mix dry ingredients:
Add the flour, baking powder, baking soda, and salt to the bowl.
Stir gently until the batter is combined — do not overmix.
- Fold in pecans (and chocolate chips if using).
- Transfer to the pan and spread evenly with a spatula.
- Bake for 22–28 minutes or until the edges are golden but the center is still slightly soft — this keeps them gooey!
- Finish: Sprinkle flaky sea salt on top while warm.
- Cool completely before cutting into squares for clean slices.
