Cajun Chicken Over Creamy Butter Rice with Garlicky Broccoli

Ingredients
For the Cajun Chicken

1 chicken breast

1 tbsp olive oil or butter

1 tsp Cajun seasoning

1/2 tsp smoked paprika

1/2 tsp garlic powder

Salt & pepper to taste

For the Butter Rice

1 cup cooked rice (or ½ cup uncooked)

1 tbsp butter

1/2 tsp turmeric or a pinch of saffron (for color)

1/2 tsp garlic powder

Salt & pepper

For the Broccoli

1–1½ cups broccoli florets

1 tbsp butter or olive oil

1 clove garlic, minced

Salt & pepper

Optional: red pepper flakes

Directions

  1. Cook the Chicken

Season chicken with Cajun seasoning, paprika, garlic powder, salt, and pepper.

Heat oil in a skillet on medium-high.

Sear chicken 4–6 minutes per side until juicy and cooked through.

Let it rest, then slice.

  1. Make the Butter Rice

Add cooked rice to a warm pan with butter.

Stir in turmeric (or saffron), garlic powder, salt, and pepper.

Mix until fluffy and evenly golden.

  1. Cook the Broccoli

Sauté broccoli in butter or oil for 3–4 minutes.

Add garlic, salt, and pepper.

Cook until tender but still bright.

  1. Assemble

Plate the butter rice, top with sliced chicken, and add the broccoli on the side. Sprinkle fresh parsley if desired.
