Blackened Salmon with Creamy Mashed Potatoes & Southern-Style Green Beans (No Bacon)

Ingredients
For the Blackened Salmon

1 salmon fillet

1 tbsp olive oil or butter

1 tsp smoked paprika

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp dried thyme

1/4 tsp cayenne (optional)

Salt & pepper

For the Creamy Mashed Potatoes

2 medium potatoes, peeled & cubed

2 tbsp butter

1/4 cup milk or cream

Salt & pepper to taste

Optional: 1 tbsp sour cream for extra creaminess

For the Bacon-Free Green Beans

1 1/2 cups green beans (fresh or canned)

1 tbsp olive oil

1 small onion, diced

2 cloves garlic, minced

1/4 tsp smoked paprika (gives smoky flavor without bacon)

1/4 tsp red pepper flakes (optional)

Salt & pepper to taste

Optional: splash of vegetable broth for extra flavor

Directions

  1. Make the Mashed Potatoes

Boil potatoes until soft.

Mash with butter, milk, salt, and pepper until creamy.

Set aside.

  1. Prepare the Bacon-Free Green Beans

Heat olive oil in a skillet.

Add onions and cook until soft.

Stir in garlic and green beans.

Season with smoked paprika, red pepper flakes, salt, and pepper.

Optional: add a splash of veggie broth and simmer 3–5 minutes.

  1. Cook the Blackened Salmon

Mix all the spices.

Rub both sides of the salmon with oil and seasoning.

Sear in a hot pan, 3–4 minutes per side until blackened and cooked through.

  1. Assemble

Plate the mashed potatoes, place the salmon on top, and add the green beans on the side. Sprinkle parsley if desired.
