Ingredients:
2 Tilapia fillets (6 oz each)
2 Red bell peppers
2 Garlic cloves
2 tablespoons Olive oil
2 tablespoons Lemon juice, freshly squeezed
Salt and pepper to taste

Instructions:
Preheat oven to 400°F (200°C). Slice red bell peppers into strips. Toss with 1 tablespoon olive oil, salt, and pepper. Spread on a baking sheet and roast for 20 minutes, or until soft and charred at the edges.
