Ingredients
1 medium cucumber, diced
2 tomatoes, diced
1/2 red bell pepper, diced
1/2 yellow bell pepper, diced
1/2 green bell pepper, diced
1 small red onion, finely chopped
A handful of black olives
Cream cheese wedges or feta cheese, cut into pieces
Lettuce leaves for garnish (optional)
For the Dressing:
2 tbsp olive oil
1 tbsp lemon juice
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp dried oregano (optional)
Preparation
- In a large bowl, combine cucumber, tomatoes, onion, red pepper, yellow pepper, and green pepper.
- Add the black olives and gently mix everything together.
