Ingredients
For the crust:
2 cups graham cracker crumbs
1/2 cup melted butter
1/4 cup granulated sugar
For the cream cheese layer:
2 cups cream cheese, softened
1 cup granulated sugar
1 cup heavy cream, cold
1 tsp vanilla extract
For the cherry mousse:
2 cups cherry pie filling (or cherry puree)
1 cup heavy cream, cold
1/3 cup powdered sugar
2 tsp gelatin
2 tbsp water (for blooming the gelatin)
For garnish (optional):
Fresh cherries
White chocolate shavings

Preparation
1️⃣ Make the crust
- In a bowl, combine graham cracker crumbs, melted butter, and sugar.
- Mix until fully combined and texture resembles wet sand.
- Press firmly into the bottom of a 9-inch springform pan.
- Place in the fridge for 15–20 minutes to set.
2️⃣ Make the cream cheese layer
- Beat softened cream cheese and sugar until smooth and creamy.
- Add vanilla extract.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cheese mixture until smooth.
- Spread the cream cheese filling evenly over the chilled crust and refrigerate while preparing the mousse.
3️⃣ Make the cherry mousse
- Bloom gelatin by sprinkling it over 2 tbsp water. Let sit for 5 minutes.
- Warm 1/2 cup of the cherry pie filling/puree and mix it with the gelatin until fully dissolved.
- In a mixing bowl, whip the heavy cream with powdered sugar into soft peaks.
- Fold in the remaining cherry filling plus the gelatin mixture until smooth.
- Pour the cherry mousse over the cream cheese layer and smooth the top.
- Refrigerate for at least 4–6 hours or overnight for best results.
4️⃣ Garnish & serve
Top with fresh cherries, whipped cream, or white chocolate shavings before serving.
