Luxurious Cherry Mousse Cheesecake

Light, creamy, and irresistibly elegant — this no-bake cherry mousse cheesecake is a dream dessert! A crumbly buttery crust, silky smooth cream cheese filling, and a fluffy cherry mousse topping create the perfect balance of richness and freshness.

Ingredients

For the crust:

2 cups graham cracker crumbs

1/2 cup melted butter

1/4 cup granulated sugar

For the cream cheese layer:

2 cups cream cheese, softened

1 cup granulated sugar

1 cup heavy cream, cold

1 tsp vanilla extract

For the cherry mousse:

2 cups cherry pie filling (or cherry puree)

1 cup heavy cream, cold

1/3 cup powdered sugar

2 tsp gelatin

2 tbsp water (for blooming the gelatin)

For garnish (optional):

Fresh cherries

White chocolate shavings

Whipped cream

Preparation

1️⃣ Make the crust

  1. In a bowl, combine graham cracker crumbs, melted butter, and sugar.
  2. Mix until fully combined and texture resembles wet sand.
  3. Press firmly into the bottom of a 9-inch springform pan.
  4. Place in the fridge for 15–20 minutes to set.

2️⃣ Make the cream cheese layer

  1. Beat softened cream cheese and sugar until smooth and creamy.
  2. Add vanilla extract.
  3. In a separate bowl, whip the heavy cream until stiff peaks form.
  4. Gently fold the whipped cream into the cheese mixture until smooth.
  5. Spread the cream cheese filling evenly over the chilled crust and refrigerate while preparing the mousse.

3️⃣ Make the cherry mousse

  1. Bloom gelatin by sprinkling it over 2 tbsp water. Let sit for 5 minutes.
  2. Warm 1/2 cup of the cherry pie filling/puree and mix it with the gelatin until fully dissolved.
  3. In a mixing bowl, whip the heavy cream with powdered sugar into soft peaks.
  4. Fold in the remaining cherry filling plus the gelatin mixture until smooth.
  5. Pour the cherry mousse over the cream cheese layer and smooth the top.
  6. Refrigerate for at least 4–6 hours or overnight for best results.

4️⃣ Garnish & serve

Top with fresh cherries, whipped cream, or white chocolate shavings before serving.
