
Ingredients:
- 750 g (5 3/4 cups) all-purpose flour, plus extra for rolling
- 350 ml (1 1/2 cups) sparkling water
- 50 g (1.75 oz) fresh yeast
- 100 ml (7 tbsp) melted butter
- 3 large eggs
- 1 tsp salt
- 4 tbsp sugar
- 150 g (1 1/4 cups) shredded cheddar cheese
- 300 g (2 1/2 cups) shredded mozzarella cheese
- 1 pack pepperoni slices
- Pizza sauce
Directions:
- In a bowl, mix the yeast and sparkling water. Let it sit for 5 minutes to activate.
- Add the salt, sugar, melted butter, and eggs to the yeast mixture. Stir until everything is well combined.
- Gradually mix in the flour until you have a soft, sticky dough.
- Cover the dough with a clean towel and let it rise in a warm place for 1 hour.
- Preheat your oven to 350°F (175°C) with the fan on.
- Lightly flour your work surface. Knead the dough briefly, then divide it into 12 equal pieces. Roll each piece into a ball.
- Place 6 dough balls on each of two baking sheets, leaving space between them to allow for rising.
- Use your fingers to make small indents in the tops of the rolls.
- Spread a spoonful of pizza sauce over each roll.
- Top half of the rolls with shredded cheddar and pepperoni. Top the other half with extra mozzarella cheese.
- Bake the rolls in the preheated oven for about 18 minutes, or until they are golden brown.
- Serve warm, or let them cool and freeze for later enjoyment.
