
Ingredients
Base Layer
¾ cup almond flour
2 Tbsp butter
¼ cup powdered Swerve or monk fruit sweetener
½ cup peanut butter
1 tsp vanilla extract
Chocolate Topping
½ cup sugar-free chocolate chips
1 Tbsp coconut oil
Instructions
Prepare the Base:
Add all base ingredients to a bowl. Use a pastry cutter (or two butter knives) to blend until everything is well combined.
Press Into Pan:
Firmly press the mixture into an 8×8-inch pan, spreading it evenly.
Make the Topping:
Microwave the chocolate chips and coconut oil in 30-second intervals, stirring between each round until smooth.
Assemble:
Pour the melted chocolate mixture evenly over the peanut butter base.
Chill:
Refrigerate for 1–2 hours, or until fully set.
Serve:
Slice into 8 bars and enjoy!
