Pan-Seared Scallops with Crispy Brussels Sprouts & Herb Fries

Ingredients (Serves 3–4)

For the Scallops

1 ½ lbs fresh scallops

2 tbsp olive oil or butter

1 tsp paprika

½ tsp garlic powder

Salt & black pepper, to taste

Lemon wedges, for serving

For the Crispy Brussels Sprouts

2 cups Brussels sprouts, halved

1 tbsp olive oil

½ tsp garlic powder

Salt & pepper

6 cherry tomatoes, halved (optional)

For the Herb Fries

4 cups French fries (fresh or frozen)

1 tbsp chopped parsley

½ tsp paprika

½ tsp garlic powder

Salt, to taste

Directions

  1. Prepare the Herb Fries

Bake or air-fry the French fries until crispy.

While still hot, toss with parsley, garlic powder, paprika, and salt. Set aside.

  1. Roast the Brussels Sprouts

Preheat oven to 400°F / 200°C.

Toss Brussels sprouts with olive oil, garlic powder, salt, and pepper.

Roast for 18–20 minutes until browned and crispy.

Mix in cherry tomatoes if desired.

  1. Cook the Scallops

Pat scallops dry with paper towels — this step helps them brown perfectly.

Season both sides with paprika, garlic powder, salt, and pepper.

Heat olive oil or butter in a skillet over medium-high heat.

Add scallops and sear 2–3 minutes per side until golden brown.

Remove from heat and squeeze fresh lemon juice over the top.

Serving

Plate the scallops beside the herb fries and roasted Brussels sprouts.
Garnish with lemon wedges and enjoy immediately!
