Strawberry Cream Cake Rolls


How cute are these little pink rolls?!

Soft strawberry sponge, a creamy vanilla filling, pink glaze on top, and a sprinkle of buttery crumbs… finished with fresh strawberries.
They’re sweet, fluffy, and perfect for sharing .

Ingredients

For the Pink Sponge Cake:

  • 3 eggs
  • 1/2 cup sugar
  • 1/2 cup flour
  • 1/2 tsp baking powder
  • 1 tbsp oil
  • 1 tsp vanilla
  • A few drops pink food coloring
  • 1/4 cup finely chopped strawberries (optional)

For the Cream Filling:

  • 1 cup whipping cream
  • 3 tbsp powdered sugar
  • 1/2 cup cream cheese
  • 1 tsp vanilla

For the Pink Glaze:

  • 1 cup powdered sugar
  • 2–3 tbsp milk
  • Pink coloring or strawberry syrup

For the Crumble Topping:

  • 4 crushed cookies or biscuits
  • 1 tbsp melted butter

For Decoration:

  • Fresh strawberries Directions
  1. Make the sponge:
    – Whip eggs and sugar until thick and pale.
    – Fold in flour + baking powder gently.
    – Add oil, vanilla, and pink color.
    – Spread onto a lined tray and bake 10–12 mins at 180°C.
  2. Roll while warm:
    – Turn cake onto a towel, roll it gently, and let it cool.
  3. Prepare the filling:
    – Whip cream, then beat cream cheese, sugar, and vanilla.
    – Fold together until smooth.
  4. Assemble:
    – Unroll cake, spread filling, add chopped strawberries if you like.
    – Roll again and chill for 30 minutes.
  5. Glaze & top:
    – Mix glaze ingredients and pour over rolls.
    – Sprinkle crumble and add fresh strawberry halves.
