Ingredients

1 hanger steak (about 1–1.5 lb / 450–700 g)

2 tbsp olive oil

1 tsp coarse salt

1 tsp black pepper

1 tsp garlic powder

1 tsp smoked paprika

½ tsp onion powder

½ tsp dried thyme (optional)

1 tbsp butter (for finishing)

Directions

Prep the steak
Pat the hanger steak dry with paper towels to help with browning.

Season generously
In a small bowl, mix salt, pepper, garlic powder, smoked paprika, onion powder, and thyme.
Rub olive oil over the steak, then coat fully with the seasoning.

Preheat the skillet or grill
Heat a cast-iron skillet or grill over high heat until smoking hot.

Sear the steak
Place the hanger steak on the hot surface and cook 4–5 minutes per side for medium-rare (adjust for desired doneness).

Add butter & rest
Add a tablespoon of butter on top and let it melt over the steak.
Remove and rest the steak on a cutting board 5–8 minutes.

Slice and serve
Slice against the grain for maximum tenderness and enjoy!

Tips for Best Results

Always slice hanger steak against the grain — it makes a huge difference!
A smoking-hot pan or grill = the best crust.
Let the steak rest before slicing to keep it juicy.
