1 lb (450 g) ground beef
2 tbsp olive oil or butter
½ medium onion, chopped
2 cloves garlic, minced
2 celery stalks, chopped
1 small zucchini, diced
1 cup chopped green beans (fresh or frozen)
½ cup diced bell peppers (any color)
1 (14.5 oz) can diced tomatoes (no sugar added)
4 cups beef broth (low sodium)
1 tbsp tomato paste
1 tsp Italian seasoning
½ tsp smoked paprika
Salt and pepper to taste
Optional: ½ tsp crushed red pepper flakes for spice
Instructions
Brown the beef:
In a large pot over medium heat, add oil or butter.
Brown the ground beef until no longer pink, breaking it apart as it cooks.
Drain excess fat if necessary.
Add aromatics:
Stir in onion, garlic, celery, and bell peppers.
Sauté for 3–4 minutes until softened and fragrant.
Add broth and seasonings:
Pour in beef broth, diced tomatoes, tomato paste, and spices.
Stir well to combine.
Add low-carb vegetables:
Add zucchini and green beans (or any other keto veggies like spinach or cauliflower).
Bring to a boil, then reduce heat and simmer uncovered for 20–25 minutes until vegetables are tender.
Adjust and serve:
Taste and adjust seasoning as needed.
Serve hot, optionally topped with shredded cheese or a dollop of sour cream.
