Ingredients

For the cake batter:

1 box yellow cake mix

4 large eggs

1 cup apple pie filling (or 2 apples peeled & diced + 1 tbsp sugar + 1 tsp cinnamon)

½ cup vegetable oil

½ cup water

1 tsp vanilla extract

1 tsp ground cinnamon

Cheesecake swirl:

8 oz (225 g) cream cheese, softened

½ cup unsalted butter, melted

2 cups powdered sugar

1 tsp vanilla extract

Add-ins (bottom layer):

¾ cup sweetened shredded coconut

½ cup chopped pecans or walnuts (optional)

Preparation

1️⃣ Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan.

2️⃣ Make the base layer:
Sprinkle shredded coconut evenly over the bottom of the pan, then add pecans or walnuts on top.

3️⃣ Prepare the cake batter:

In a large bowl mix the cake mix, eggs, apple pie filling, vegetable oil, water, vanilla, and cinnamon.

Pour this batter over the coconut and nuts in the baking pan.

4️⃣ Prepare the cheesecake mixture:

In another bowl, beat softened cream cheese, melted butter, powdered sugar, and vanilla until smooth and creamy.

Spoon this mixture over the cake batter in dollops. Do not mix — just swirl gently with a knife.

5️⃣ Bake for 40–50 minutes, until the cake is golden and set around the edges.
(The center may jiggle slightly — this is normal because of the creamy pockets!)

6️⃣ Let cool for at least 20 minutes before slicing.
