No-Bake Berry Bliss Cheesecake

Tell me this doesn’t look like the creamiest little cloud of happiness!
Thick, velvety cheesecake filling… buttery biscuit crust… and that glossy mixed-berry topping dripping down the sides. Pure dessert magic.

Here’s the easy recipe so you can make your own mini heaven at home:
Ingredients

Crust:

  • 1 ½ cups crushed biscuits (Digestive or graham)
  • 5 tbsp melted butter

Creamy Filling:

  • 1 cup heavy cream, whipped
  • 250g cream cheese, softened
  • 1/3 cup sugar
  • 1 tsp vanilla
  • 1 tbsp lemon juice

Berry Topping:

  • 1 ½ cups mixed berries (fresh or frozen)
  • 2 tbsp sugar
  • 1 tbsp lemon juice
  • 1 tsp cornstarch + 1 tbsp water Directions

1️⃣ Mix crushed biscuits and melted butter, press into a small mold, and chill.
2️⃣ Beat cream cheese, sugar, vanilla, and lemon juice until smooth.
3️⃣ Fold in the whipped cream gently and pour over the crust. Refrigerate 4 hours.
4️⃣ For the topping: heat berries with sugar and lemon. Add cornstarch slurry and cook until glossy. Cool completely.
5️⃣ Pour over the cheesecake, slice, enjoy… and try not to finish the whole thing alone
