What You’ll Need:
For the Steak Skewers:
1 pound sirloin steak, trimmed of excess fat and cut into 1-inch cubes
1 tablespoon olive oil
1 teaspoon dried rosemary
1 teaspoon dried thyme
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1 bell pepper (any color you like!), cut into 1-inch pieces
1 red onion, cut into 1-inch pieces
Wooden or metal skewers (if using wooden, soak them in water for 30 minutes beforehand)
For the Creamy Mashed Potatoes:
2 pounds Yukon Gold potatoes, peeled and quartered
1/4 cup milk (or half-and-half for extra creaminess!)
2 tablespoons butter
1/4 teaspoon salt, or to taste
Pinch of white pepper (optional, it’s milder than black pepper)
Let’s Make It Delicious!
For the Steak Skewers:
Prep the steak: In a medium bowl, toss the steak cubes with olive oil, rosemary, thyme, garlic powder, salt, and pepper. Make sure each piece is nicely coated!
- Assemble the skewers:Thread the marinated steak cubes onto your skewers, alternating with the bell pepper and red onion pieces. Don’t pack them too tightly, so they cook evenly.
- Cook ’em up: Heat a grill pan or outdoor grill to medium-high heat. Place the skewers on the hot pan and cook for about 4-5 minutes per side, until the steak is cooked to your desired doneness (we’re aiming for tender and juicy!).
For the Creamy Mashed Potatoes:
Boil the potatoes: Place the peeled and quartered potatoes in a large pot and cover them with cold water. Add a pinch of salt to the water. Bring to a boil and cook for 15-20 minutes, or until the potatoes are fork-tender. - Drain and mash: Drain the potatoes very well. Return them to the warm pot. Add the milk and butter.
- Get mashing! Using a potato masher or a sturdy fork, gently mash the potatoes until they are creamy and smooth. Stir in the salt and white pepper (if using) until everything is well combined. Taste and add a little more salt if needed.
Serving Time!
Serve those beautiful steak skewers hot, right alongside a generous scoop of your warm, creamy mashed potatoes. It’s a comforting and flavorful meal that’s sure to bring smiles to the table!
