Ingredients:
8–10 lasagna noodles, cooked according to package instructions
2 cups ricotta cheese
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
2 cups fresh spinach, chopped
1 egg
2 cups marinara sauce
2 garlic cloves, minced
1 teaspoon dried oregano
Salt and freshly ground black pepper, to taste
Fresh basil, for garnish
Instructions:
Prepare the Filling:
In a bowl, combine ricotta, 1/2 cup mozzarella, Parmesan, chopped spinach, egg, garlic, oregano, salt, and pepper. Mix until smooth.
Assemble the Roll-Ups:
Lay cooked lasagna noodles flat. Spread a generous layer of the ricotta-spinach mixture over each noodle. Roll up tightly and place seam-side down in a baking dish spread with 1/2 cup marinara sauce.
Add Sauce & Cheese:
Pour remaining marinara sauce over the roll-ups and sprinkle the remaining mozzarella on top.
Bake:
Preheat oven to 375°F (190°C). Cover with foil and bake for 20 minutes. Remove foil and bake another 10 minutes until cheese is bubbly and slightly golden.
Serve:
Garnish with fresh basil and serve warm.

Make Ahead: Assemble roll-ups and refrigerate up to 24 hours before baking.
Extra Flavor: Add sautéed mushrooms or sun-dried tomatoes to the filling.
