Ingredients (makes 6–8 bombs)
1 lb (450g) ground chicken
6–8 strips of bacon
1 cup shredded cheddar cheese
1/4 cup buffalo sauce (or more to taste)
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
Salt and pepper to taste
Optional: ranch or blue cheese dressing for dipping
Instructions
Preheat Oven:
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Prepare the Filling:
In a bowl, mix ground chicken with garlic powder, onion powder, salt, pepper, shredded cheddar, and buffalo sauce.
Form Chicken Bombs:
Take a portion of the chicken mixture and shape it into a ball (about the size of a golf ball).
Wrap each ball with a strip or two of bacon, securing with toothpicks if needed.
Bake:
Place bacon-wrapped chicken balls on the prepared baking sheet.
Bake for 25–30 minutes or until chicken is fully cooked (internal temp 165°F / 74°C) and bacon is crispy.
Optional Broil:
For extra crispy bacon, broil for 1–2 minutes at the end.
Serve:
Drizzle with extra buffalo sauce and serve with ranch or blue cheese dressing.
