
Ingredients
Crust:
1 ½ cups shredded mozzarella cheese
2 tbsp cream cheese
1 cup almond flour
1 large egg
½ tsp garlic powder
½ tsp Italian seasoning
Toppings:
½ cup sugar-free pizza sauce (or low-carb marinara)
1 ½ cups shredded mozzarella cheese
½ cup pepperoni slices
¼ cup diced green bell pepper
¼ cup diced mushrooms
2 tbsp sliced black olives (optional)
Instructions
Preheat oven:
Set to 425°F (220°C) and line a baking sheet with parchment paper.
Make the crust (fathead dough):
In a microwave-safe bowl, combine mozzarella and cream cheese.
Microwave for 1 minute, stir, then heat another 30 seconds until melted.
Add almond flour, egg, garlic powder, and Italian seasoning. Mix until a soft dough forms.
Roll or press out into a thin rectangle or circle on the parchment-lined pan.
Prebake:
Bake crust for 8–10 minutes, until golden and firm.
Remove and let it cool slightly.
Add toppings:
Spread the pizza sauce evenly over the crust. Sprinkle mozzarella on top, then add pepperoni, peppers, mushrooms, and olives.
Bake again:
Return to oven for 8–10 minutes, or until cheese is melted and bubbly.
Serve:
Cool for a few minutes, slice, and enjoy!
