
Ingredients
6 sausage patties (pork or turkey, no sugar added)
6 large eggs
½ cup shredded cheddar cheese
1 tbsp butter or olive oil
Salt and pepper, to taste
Instructions
Cook the sausage:
In a skillet, cook sausage patties over medium heat until browned and fully cooked. Place one patty in each meal prep container or ramekin.
Cook the eggs:
In the same skillet (add butter if needed), fry or bake eggs to your liking — sunny-side, over-easy, or fully cooked.
Season with salt and pepper.
Assemble:
Place a cooked egg on top of each sausage patty. Sprinkle shredded cheddar over the top while still warm so it melts nicely.
Store or serve:
Let them cool slightly, then seal and refrigerate. Reheat in the microwave for 30–45 seconds before eating.
Tips
For variety, add a layer of cooked spinach, mushrooms, or sliced avocado.
You can swap cheddar for mozzarella or pepper jack.
These keep in the fridge up to 5 days or can be frozen for longer storage.
