
Ingredients
Meatloaf Base
2 lbs ground beef (80/20 blend)
1 lb ground pork (optional, for extra flavor)
2 large eggs
½ cup grated Parmesan cheese
¼ cup unsweetened almond flour or crushed pork rinds
½ cup chopped onion
2 cloves garlic, minced
2 tbsp sugar-free ketchup
1 tbsp Worcestershire sauce (optional, check for low-carb)
1 tsp smoked paprika
1 tsp salt
½ tsp black pepper
Filling
6 slices ham or turkey
1 ½ cups shredded cheddar or mozzarella cheese
Wrap & Topping
10–12 slices bacon
½ cup sugar-free ketchup mixed with 1 tsp apple cider vinegar and ½ tsp erythritol (optional glaze)
Instructions
- Preheat Oven
Heat oven to 375°F (190°C).
Line a loaf pan or baking dish with foil for easier cleanup.
- Mix the Meatloaf
In a large bowl, combine all the meatloaf base ingredients.
Mix gently with your hands or a spatula until evenly combined — don’t overmix.
- Assemble and Fill
Lay the meat mixture on parchment paper and flatten into a large rectangle (about ¾ inch thick).
Layer ham slices over the meat, then add the shredded cheese.
Roll it up tightly like a jelly roll, sealing the edges well.
- Wrap in Bacon
Lay bacon strips across the top of the meatloaf, overlapping slightly.
Tuck the ends underneath to secure.
Brush with the optional sugar-free glaze for shine and extra flavor.
- Bake
Place in a cast iron pan or loaf pan.
Bake uncovered for 45–55 minutes, until bacon is crisp and internal temperature reaches 160°F (70°C).
If bacon needs more crisping, broil for 2–3 minutes at the end.
- Rest and Serve
Let it rest for 10 minutes before slicing.
Serve warm with your favorite keto sides like mashed cauliflower or roasted green beans.
