Ingredients
For the Dough:
2 ½ cups all-purpose flour
1 tsp salt
1 tbsp granulated sugar
1 cup (2 sticks) cold unsalted butter, cubed
6–8 tbsp ice-cold water
For the Peach Filling:
2 cups fresh or canned peaches, diced
⅓ cup granulated sugar
1 tbsp cornstarch
1 tbsp lemon juice
1 tsp vanilla extract
½ tsp ground cinnamon (optional)
For the Glaze:
1 cup powdered sugar
2–3 tbsp milk
½ tsp vanilla extract
Step-by-Step Instructions
1️⃣ Prepare the Dough
- In a large bowl, whisk together the flour, salt, and sugar.
- Add the cold cubed butter and use a pastry cutter (or your fingers) to mix until the texture looks like coarse crumbs.
- Slowly add ice water, 1 tablespoon at a time, mixing just until the dough comes together.
- Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 1 hour.
2️⃣ Make the Peach Filling
- In a small saucepan, combine the diced peaches, sugar, cornstarch, lemon juice, and cinnamon.
- Cook over medium heat for 5–7 minutes, stirring constantly until the mixture thickens and becomes glossy.
- Remove from heat, stir in the vanilla extract, and let it cool completely.
3️⃣ Assemble the Hand Pies
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Roll out the chilled dough on a lightly floured surface to about ⅛ inch thick.
- Cut out circles using a round cutter (about 4–5 inches wide).
- Place 1–2 tablespoons of peach filling in the center of each circle.
- Fold the dough over to form a half-moon shape and press the edges with a fork to seal.
- Transfer the pies to the prepared baking sheet.
4️⃣ Bake
- Bake for 20–25 minutes, or until golden brown.
- Remove from the oven and let them cool for about 10 minutes on a wire rack.
5️⃣ Prepare the Glaze
- In a small bowl, whisk together the powdered sugar, milk, and vanilla until smooth and slightly thick.
- Brush or drizzle the glaze over the warm pies.
- Let the glaze set for a few minutes before serving.
