Ingredients:
For the Fathead Dough:
1 ½ cups shredded mozzarella cheese
2 tablespoons cream cheese
¾ cup almond flour
1 egg
½ teaspoon baking powder
Pinch of salt
For the Filling:
1 pound ground sausage (pork, turkey, or chicken)
1 teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon Italian seasoning or sage
Salt & pepper to taste
Optional: ¼ cup shredded cheddar for a cheesy filling
Instructions:
Preheat oven:
Set to 400°F (200°C). Line a baking sheet with parchment paper.
Cook the sausage filling:
In a skillet, cook sausage over medium heat until browned.
Add garlic powder, onion powder, seasoning, and salt & pepper.
Stir in cheddar cheese (optional). Let cool slightly.
Make the Fathead dough:
In a microwave-safe bowl, melt mozzarella and cream cheese together for 1 minute.
Stir, then microwave another 30 seconds until smooth.
Add almond flour, baking powder, egg, and salt.
Mix well until a dough forms (knead with your hands if sticky).
Assemble rolls:
Roll dough between parchment paper into a rectangle (~¼ inch thick).
Cut into strips (about 2×4 inches).
Place a spoonful of sausage filling on one end and roll up tightly.
Bake:
Arrange rolls seam-side down on the baking sheet.
Brush tops with egg wash (1 beaten egg for shine).
Bake 15–20 minutes, until golden brown.
Cool slightly & serve:
