Instructions:
Preheat oven or air fryer
Oven: 400°F (200°C)
Air fryer: 375°F (190°C)
Prepare the zucchini
Shred the zucchini and squeeze out excess water using a clean towel or cheesecloth.
Mix ingredients
In a bowl, combine shredded zucchini, mozzarella, Parmesan, egg, almond flour, garlic powder, Italian seasoning, salt, and pepper. Mix until well combined.
Form patties
Scoop about 2 tablespoons of the mixture and form small round patties or spoon into muffin tins for perfectly shaped bites.
Cook
Oven: Place on parchment-lined baking sheet and bake 20–25 minutes, flipping halfway until golden brown.
Air fryer: Cook 10–12 minutes, flipping once until crisp.
Drain & serve
Let cool slightly on paper towels to remove any excess oil.
Serve warm with keto-friendly dips like sour cream, ranch, or marinara.
Tips:
For extra crispiness, add a tablespoon of pork rind crumbs or coconut flour.
Substitute zucchini with cauliflower rice, broccoli, or even cheddar cheese for variation.
