Ingredients:
1 cup shredded mozzarella cheese
20–25 slices mini pepperoni (or large slices cut in half)
2 tablespoons sugar-free pizza sauce or marinara (like Rao’s)
¼ teaspoon Italian seasoning (optional)
Optional: low-carb tortilla (if you want a wrap-style version like in the picture)

Instructions (2 ways!):
Option 1 — Cheese-Only Roll-Ups (Crispy Style):
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
Spread cheese: Place small piles (2 tbsp each) of shredded mozzarella spaced apart on the sheet.
Add pepperoni: Place 2–3 pepperoni slices on top of each cheese pile.
Bake 6–8 minutes, until cheese edges are golden and bubbly.
Cool slightly & roll: Let cool 1 minute, then roll up each piece while warm.
Serve with a side of sugar-free pizza sauce for dipping.
Option 2 — Tortilla Roll-Ups (Soft & Cheesy Style, like your photo):
Lay out a low-carb tortilla.
Spread 1 tablespoon of sugar-free pizza sauce evenly.
Layer with mozzarella cheese and pepperoni slices.
Roll tightly and secure with a toothpick if needed.
